A lot of people like their Champagne young and bubbly. For them, the Non-Vintage (NV) version makes better sense and they cost a great deal less. If you have a palate for more complexity in your wine, you probably want something with a bit of age in it. This is never truer than in the world of champagne.

Vintage Champagne age very nicely. Casualty rates for older bottles are much lower than for dry still wines. Inside the main cellar of YATS Restaurant ( you can find a couple of bottles of 1907 Heidsieck & Co. Monopole that were perfectly preserved for half a century by cold still water at the bottom of the sea.

How to get there?

Once you arrive in Clark Freeport, go straight until you hit Mimosa (on the left side of the main road). Turn left into Mimosa and travel straight on Mimosa Drive (staying left) past the Holiday Inn, you will find YATS Restaurant and Wine Lounge, a green top independent building.

There you can find over 20 vintages of Dom Perignon dating back to 1962. The 1969 Boizel Brut Grand Vintage is drinking beautifully for those who appreciate older vintage Champagne. For those who prefer matured Champagne with a bit more youthful vigor, the Duval-Leroy Cuvee 2000 is very popular notably for its rounder mouth-feel and fresh Chardonnay qualities shining through. The 1990 Grand Dame is also drinking nicely but it will surely be more impressive after a decade or two.

Vintage Champagne is a connoisseur's wine in almost all respect. It is an acquired taste.
